Pita Pizza. As an appetizer or light lunch, these mini pizzas are easy to make and use readily available ingredients. Blue cheese adds a unique flavor, and pita bread is the perfect crust. Assemble the pizzas: Arrange pita breads on two baking sheets.

Brush the pita with oil, layer on the veggies and cheese, and then grill until the pita is crisp, the veggies are tender and the cheese is melted. Spread pasta sauce evenly over both pitas.

Pita Pizza instructions

  1. Take one pita and evenly spread the pizza sauce. Add the ingredients you would like under the cheese (usually larger ingredients go underneath to keep them from falling off)..
  2. Sprinkle as much mozzarella cheese as you would like then add your final toppings..
  3. To finish it off sprinkle a bit more cheese, to keep those toppings on, and sprinkle some Italian seasoning and parsley flakes..
  4. Preheat oven to 375°F. Bake for 7 minutes..

Sprinkle with onion, green pepper and ham. Brush on a little olive oil on the pita. Spread sauce on top of the pita. Sprinkle on pinches of desired herbs and spices, and add any toppings you'd like. Slice with pizza cutter and enjoy!
